I love to way that the Vietnamese have seamlessly incorporated French and Chinese cuisine – and made it entirely their own. Even the most famous Vietnamese dish – Pho, is said by some to based on a French stock – or feu. So a seamless mix then of Chinese and French cuisine, with a distinctly Vietnamese finish if that is true!
